For Gujarati Suva Kadhi
1/4 cup chopped dill leaves
2 tbsp besan (bengal gram flour)
2 cups curd (dahi)
1 tsp ginger-green chilli paste
2 curry leaves (kadi patta)
2 tsp sugar
salt to taste
2 tsp coconut oil or oil
1/2 tsp cumin seeds (jeera)
1/2 tsp mustard seeds ( rai / sarson)
a pinch asafoetida (hing)
1 whole dry kashmiri red chilli , broken into pieces

- In a non stick pan put2 tbspbesan (bengal gram flour).
- Add2 cupscurds (dahi).
- Add2½ cups of water.
- Whisk well till no lumps remain.
- Transfer to a deep non stick pan.
- Bring to a boil.
- Add1 tspginger-green chilli paste.
- Add2curry leaves (kadi patta).
- Add 2tspsugar(approx.). NOTE. If curds are sour, then add more sugar.
- Add salt to taste. We added 1tsp salt.
- Mix well.
- Cook for 2 to 3 minutes, while stirring continuously.

- Heat 2 tsp oil in small non-stick pan.
- Add1/2 tspcumin seeds (jeera).
- Add1/2 tspmustard seeds ( rai / sarson).
- Let the seeds crackle.
- Add a pinch of asafoetida.
- Add1whole dry red chilli, broken into pieces.
- Sauté on a medium flame for few seconds.

- Mix well.
